Keeping with the Hernandez family trafamily dition, the Esteban and June-Le- e cook up authentic Mexican food for their New Year's Eve celebration. Esteban's family lives in Texas, and . that is where his wife learned to cook like his mother and grandmother. " My mother, grandmother and aunts get together and make a feast," said Esteban. And this week his son Evan and daughter Erika helped him make tamales for their New Years Eve The recipes they use are from his moth, er and dont have exact measurements, so it is hard to give out the family recipes. The children sat with their dad at the kitchen table putting the tamales together as their mother cooked bunuelos in hot grease. She uses very little oil in her cooking and seldom fries food, but the bunuelos is one exception. After they are fried they are sprinkled with a mixture of sugar and cinnamon. The bunuelos are often served with hot Mexican chocolate. Normally in a Mexican family you dont see the husband do this, Esteban said as he helped prepare the food. But living away from his family and wjnting the tradition of making Mexican food to continue, he helps. Tamales can be made with any type of meat, with pork being the traditional meat. The Hernandez family filled some with shredded beef and some with beans, but chicken, ground beef or turkey may also be used. The com husks are placed in water to soak the day before they arc to be filled. They sit overnight in a bowl to soften. Aluminum foil or parchment may be substituted for com husks. Grandma used to make them and spice them up with red or green peppers, he said. My mom served cinnamon tea for a drink. We were raised LDS so there was no coffee or tea. We drank Mexican hot chocolate, Esteban said. The fun part of the holidays is for the generations to get together to cook.
