Knight has worked with Tom since he opened his first store. Tom's proud as well, although he's still a little in shock about the award. The next morning mix in the yeast and let it rise. I bake a lot in the winter. Most of my recipes are quick and easy, he said. One ingredient hes learned to use with ease is liquor or cooking wine. The secret to making good spaghetti sauce is in the hours of cooking. The sauce must be cooked for hours to cook out the water. It needs to be cooked without a lid and stirred every once in a while. He cautions those who use wihe in cooking to let it cook down before tasting. Miller has always liked to cook, but since his retirement hes made cooking a hobby and does a lot more of it. He traveled all over the world while serving . well-equipp- ul ph-ic- couldn't be in the Air Force, picking up tips and recipes from other countries. While living in Italy he learned that hamburger is not an ingredient in spaghetti sauce. Instead Italian sausage is used. When he wants com meal to use in com bread, he just gets out either white popcorn or yellow and grinds it into flour. One of his simple recipes has just three ingredients. The peanut butter, sugar and egg are combined well and baked into cookies. No flour is used. He cautions that when using this recipe, use a good brand of peanut butter with not a lot of oil. He uses Adams brand, draining the oil off the top before using it. The oil he uses for frying fish. I started reading ingredients 10 years ago. Its worth it to spend the extra and buy Adams, it works well. You can mix these up before the oven heats, Miller said. g with You cant go them because they crumble. Most of Millers recipes came from someone or from a cookbook, but he has made some changes in them. And he warns that when using a recipe for the first time - dont second-gues- s it. Always follow the recipe when first making it and make changes only if you think it needs it when making it again. He also advises people to use a temperature gauge to see if their oven or stove is cooking at the correct temperature. With sauces, this sometimes means the difference between failure and success, he said. While he uses real wine in his cooking, cooking wine may be used. When using cooking wine leave the salt out of the recipe because the cooking wine has salt added to it. I dont drink, but I cook with it, he said. His favorite pound cake recipe calls for brandy.
