Show A. C. U. NOTES Storing Eggs in Water Glass In storing eggs in water-glass there are a few points that must be kept in mind. First, get a good grade of water-glass water-glass and mix a 10 per 'cent solution, using one quart of water-glass and nine quarts of water that has been boiled and allowed to cool before it is mixed with the water-glass. Stir the water-glass water-glass and -water thoroughly. Water-glass Water-glass being heavier than water will settle to the bottom unless it i3 thoroughly tho-roughly mixed. Allow the mixture to stand an hour or two and then stir again thoroughly. Store the eggs in a wooden, glass or crock vessel, but do not use metal of any kind. Use only fisrt class eggs. Do not. use stale eggs, cracked eggs, dirty eggs or eggs that have been washed. Be sure the eggs are of good quality and in good condition condi-tion when put in the water-glass. Store in a good clean well ventilated place. The eggs must be covered by at least an inch and a half of water-glass above the top of them. If the vessel in which they are stored is not covered with a lid, the water will evaporate and more water will have to be added from time to time. Don't use the mixture more than once. |
