We have been eating wheat products all these years as a matter of course, and it never occurred oc-curred to us that we might ever bs, called on to go without them. Now that It Is necessary to use wheat substitutes, sub-stitutes, we have discovered that useful use-ful as they are there Is nothing that really takes the place of wheat flour. The magic of the wheat lies la In gluten what the baker refers to aj the "binder." He must have a certain proportion of wheat flour to furnish the binder, or his oatmeal bread or hu rice pastry crumbles. The substitute! have the same nourishment as th wheat But they lack the quality of the wheat flour crust.
