Show -""w J II HANK God for tea! What if. " would the world do with out tea? How did it exist? ex-ist? I am glad I was not born before tea." Tea. Tea Is one of our good beverages If not taken too strong: or boiled until the tannin is extracted. When we realize that the tannin la tea is the same substance used to tan leather, which makes it tough and durable, we do not want our stomacha to undergo the tanning process. Tea should .never be boiled. One of the best of pots is a glazed earthenware earthen-ware one, that can be, and should be washed and cared for as are the dishes. Before making tea, scald the pot with boiling water, add a teaspoon-ful teaspoon-ful of tea to two cups of boiling water, wa-ter, and allow it to draw for five minutes min-utes before serving. We think eighty cents and a dollar a good price for tea, but It has been sold for many dollars dol-lars a pound. The first green leaves of the tea plant are considered the choicest, and those who know, say we never get In this country, the finest tea. Perhaps It is because we do not want to pay for it, but when one has tasted a choice cup of the best tea, the difference differ-ence is very marked. Cheap tea contains seeds of grasa, powdered hay and other unlamented remains, so don't buy cheap tea. Left-over tea may be drained from the leaves and served as iced tea. The usual proportion Is one teaspoonful to a cupful of boiling water, but that is strong for many people. For the Home Nurse.-Re Nurse.-Re gentle and kind In deed as well as in word. Be quiet and firm, and able to exert authority. Be ever on the alert to anticipate a patient's wants, but without fusslnesa, which is often very irritating to a nervous person. A wise nurse will not deceive hei patient. If the dressing of' a wound is to be painful, tell him so; but say that you will be as careful aa possible. pos-sible. Cheerfulness la better than medicine medi-cine toward those who are 111. Some of the qualifications of a successful suc-cessful nurse are gentleness, sympathy, sympa-thy, quietness, patience, firmness and Infinite tact. i i B 1 J IFE is not so short, but ther s always time for cour tesy." Emerson. "Keep the milk of human kindness ta yourself and It soon curdles." Seasoned Sirloin. Rub the pieces of sirloin with olivfl oil and vinegar, and let stand in the refrigerator for a few hours. This will soften the fibeF of the meat and make it more tender. Split each filet nearly In two, lengthwise, spread between beef marrow that has been seasoned well with salt, pepper, onion juice and a teaspoonful of minced parsley. Fasten together with toothpicks and broil. Here is a fruit salad which has an unusual combination. Pear, tomato, apple ap-ple and cherries whose pits have been removed and replaced by hazel nuts, with shredded celery. This salad la served with mayonnaise. It sounds good enough to try, does it not? Ona can hardly make a mistake In fruit salads, although too many kinds are not desirable. |
