Show Turkish Rice Soup. Pick over and wash through several waters one pint of rice, Boak in cold water for an boiir, drain and drop into a large saucepan filled with boiling water, add one teaspoonful of salt and boil rapidly for ten minutes. Drain, add one quart of clear soup stock and one saltspoonful of saffron and simmer sim-mer until tbe stock Is absorbed. Turn out in a greased mold and keep warm. Prepare an ordinary mutton soup and serve in a tureen; turn the rice out on a heated dish and serve with the soup. |
