Instead of frying or broiling the bacon find new ways to combine the flavor of bacon with other foods. Just as a father is ordinary and extraordinary so is bacon a common but very uncommon meat. BACON MUFFINS 2 cups flour 3 Tbsp. sugar 3 tsp. baking powder Vi tsp. salt 1 cup milk 1 egg 2 Tbsp. bacon fat 3 slices bacon SIFT DRY ingredients together. Bake in moderate oven 375 degrees 15 minutes for small muffins or 25 minutes for large muffins. BACON CRIPS Dip thin slices of bacon in beaten egg, then sifted cracker crumbs and place in a hot greased fry pan and fry until brown and crisp. Use as a garnish for poached or scrambled eggs. Remove from fire and add 1 Tbsp. each of lemon juice and chopped parsley. Whip very lightly and refill into shells, making a nest in the center of each with the back of a spoon. Slip an uncooked egg into each nest and bake in an oven until the eggs are firm and the potatoes are brown. By KATHRYN JENNINGS Jolene Keate, Cory 6 months, Kristin 6 and Kimberly 5 , are going to enjoy a hearty meal of chicken and dumplings. The chicken is cooked and removed from the bones, then she prepares the sauce, using cream of chicken soup, milk and chicken broth. There are also carrots, celery and onions and several herbs for delightful seasoning. Pimiento and almonds or cashews may be added for color and extra flavor if desired. AFTER THIS part of the recipe is ready, the dumplings are dropped into the bubbling soup and cooked, making a nutritious meal for the family. Jolene has also shared a recipe for chicken haystacks which the children love to make according to their taste and she adds whole wheat zucchini muffins. CHICKEN AND DUMPLINGS 1 3 or 4 lb. fryer 4 Tbsp. butter 6 Tbsp. flour 1 can cream of chicken 10-o- z. soup cups milk cups chicken broth, defatted to 3 cups carrots, sliced cups celery, chopped 1 onion, chopped Dash of thyme and pepper 1 Tbsp. parsley flakes 2 Tbsp. pimiento, optional Slivered almonds or cashews, 2 2 2 2 optional DUMPLINGS cup flour 2 tsp. baking powder Vi tsp. salt Vi cup milk 2 Tbsp. salad oil, if desired 1 BOIL THE chicken, cool and remove from bones, cut into bite size pieces. Now prepare the sauce, melting the butter, adding the flour, mixing well and stir in the can of cream of chicken soup. If desired, omit the butter, but mix cold water with the 6 Tbsp. flour for thickening. Gradually add the 2 cups milk and 2 cups chicken broth. Meantime cook carrots, celery and onion until tender and add to the sauce, above. Season with the thyme, pepper and parsley flakes. The pimiento and nuts may be added now, if desired. ADD THE chicken pieces and simmer for 1 5 to 20 minutes, adding salt to taste. Prepare the dumplings by mixing flour, baking powder and salt, add milk and oil and mix. Drop by tablespoon into the bubbling soup, in the heavy sauce pan, cover and cook for 15 minutes and serve. Beat sugar with eggs for 2 minutes and gradually add the oil and vanilla. Note: You may use only Vi cup of oil and 1 cup sugar, if desired. Most recipes work by decreasing the oil by one half. You might like to file this recipe for fresh garden zucchini. CHICKEN HAYSTACKS Gravy: 3 to 4 lb. fryer, boil and remove skin and bones chicken bouillon cube to every cup chicken broth, after boiling the chicken. Thicken this mixture with a mixture of cornstarch and cold water. Serve over the following fresh or cooked vegetables or fruit, with cooked rice. For the topping, pineapple chunks, chopped celery, sliced mushrooms, sliced broccoli, frozen peas, garbanzo or kidney beans, canned, sprouts, sesame seeds, cooked corn, tomatoes, cucumbers, cheese or even nuts.
