MAY 2, 1984 Red Is The Color Of True Rhubarb By LUCILLE STRINGHAM COMBINE brown sugar, oil, egg, vanilla and water and vinegar. Beat well. Stir in rhubarb. Stir flour, non-fa- t dry milk, soda, salt, baking powder together. Stir into moist ingredients and stir just until blended. Mix the topping ingredients together in a bowl. Sprinkle on top of muffins before baking. Makes 24 muffins. Bake at 375 degrees for 18 minutes or until done. Botanically speaking, rhubarb is a vegetable, but it is used as a fruit. Because it is frequently used in pies, rhubarb has earned the name Late April through pieplant. June is when you find rhubarb in the local markets and home gardens. CHOOSING rhubarb is easy if you look for the color. A pretty color, ranging from pink to red, means stalks will have a tart, yet somewhat sweet flavor. Stalks that are fresh, firm, crisp, and fairly thick are tender and free from strings. One pound of rhubarb yields about 5 servings, or one pint of canned or frozen fruit. Since both color and texture suffer somewhat in canning, freezing is the preferred method of preserving rhubard. (Teddy) Lewis is taking one of her famous casseroles from the oven. There are noodles, cooked turkey, ham with broccoli and other ingredients and cheese melting over the top. It is a very delicious meal, blending flavors of meats, vegetables and seasonings. THIS DELECTABLE meal in one casserole would be good for a luncheon or dinner with salad and dessert and a beverage. 4 cups diced rhubard cup sugar 2 Tbsp. cornstarch cup water tsp. vanilla MIX TOGETHER crumb topping ingredients until crumbly. Press half into the bottom of a nine inch pan. Reserve the remainder of the crumbs for the top. Put rhubarb and water on to cook in a saucepan. Simmer a few minutes to soften rhubarb, but not cooked mushy. Mix sugar and cornstarch together and add to rhubarb. Cook until thick, stirring. Add vanilla. Pour over crumbs in pan. Top with remaining crumbs. Bake at 350 degrees for one hour or until done. Cut in squares and serve with whipped cream. Serves TEDDYS CASSEROLE 1 freeze without sugar, wash ruhbarb under cold water and trim 1 leaves. Dry and cut in preferred lengths. Pack in plastic bags and seal tight, and freeze. To make sauce, put frozen rhubarb in saucepan and add a little water and cook until tender. Add sugar to taste. RHUBARB sauce may be used in place of applesauce in cake. Nutmeg, orange, and lemon are good additions to the flavor of rhubarb. Pineapple and rhubarb are good together in pies, also strawberries and rhubard blend together in pies and jam. 1 RHUBARB SPICE MUFFINS Va cups brown sugar ': cup oil egg 1 8. 1 RHUBARB FRUIT PUDDING (No shortening needed) 2 cups cooked rhubarb cup water Tbsp. vinegar 2 tsp. vanilla 'A cups diced rhubarb 2 Vi cups flour Vi cup non-fa- t dry milk 'A tsp. salt tsp. baking powder tsp. soda 1 1 2 eggs tsp. salt cup sugar, brown or white tsp. vanilla 'A tsp. nutmeg 'A tsp. cinnamon 'A tsp. baking powder 1 1 1 1 1 SPICE NUT TOPPING Tbsp. butter, melted 'A cup sugar 13 cup chopped nuts 'A tsp. nutmeg 'A tsp. cinnamon lb. egg noodles, cooked cup celery, chopped A 12 mushrooms, chopped large green pepper, chopped 1 medium onion, chopped 2 cups cooked, chopped turkey, ham or chicken 2 cans mushroom soup 1 bunch broccoli, cut into pieces Salt and pepper to taste Any desired spices, to taste 1 10-o- z. Cheese, grated SAUTE mushrooms, green pepper, onion and celery in a little butter. Add all the remaining ingredients, except cheese. Put into a buttered 9x13 inch casserole. Top with the grated cheese, any amount as desired. Bake at 350 degrees for about 20 minutes or until bubbly and cheese is melted.
