SCHAUM TORTE 2 tablespoons butter 2 cans (1 pound each) red tart 1 tablespoon lemon juice pitted cherries (water pack) V teaspoon red food coloring cup sugar 8 meringues 3 tablespoons cornstarch Whipped cream or topping ,Vi teaspoon salt Drain cherries; reserve 2 cup of the liquid. Combine sugar, cornstarch and salt in saucepan; gradually stir in cherry liquid. Cook, stirring constantly, until mixture thickens and comes to a boil. Boil l2 minute. Remove from heat; add butter, lemon juice and red food coloring. Stir in cherries. Spoon cherry mixture into 8 dessert dishes. Place Meringues over cherries. Top each with whipped cream or whipped topping. Yield: 8 servings. Meringue teaspoon salt 2 egg whites Vt cup sugar Vi teaspoon cream of tartar Beat egg whites until foamy; add cream of tartar and salt; beat Until stiff, but not dry. Gradually add sugar and beat until very Stiff. Cover baking sheet with heavy brown paper. Pile meringue into 8 rounds.
