Show The Daily Utah Chronicle, Thursday, December 6, 1979 Page Twtlvt Festive holiday recipes bestow season's cheer HOLIDAY EGGNOG To l tsp. vanilla tsp. cloves rum. brandy or bourbon 12 14 egg whites 3 cup superfine sugar 10 egg yolks 2 pints cold heavy cream 2 tbsp. superfine sugar fifth (about 26 oz.) whiskey 10 1 Fold beaten egg whites into yolks. Slowly stir in sugar and spices. Place in jar and refrigerate. For each serv ing, mix 2 12 tbsp. batter, l 12 oz. liquor and a cup of boiling water. Stir well, sprinkle with nutmeg. 1 12 oz. rum cups cold milk tbsp. grated orange rind tsp. grated lemon rind ground nutmeg 2 1 1 RICE PUDDING milk canned cups cup sugar pinch of salt 14 cup uncooked rice 14 cup raisins Place egg whites in large mixing bowl; add the 13 cup sugar. Beat with whisk or electric mixer until thick and foamy. In another large bowl, beat egg yolks until they thicken enough to drop back in ribbon form when beater is lifted from bowl. Pour egg white mixture into yolk mixture, beat thoroughly. Place heavy cream and the 2 tbsp. sugar in a n punch bowl. Beat until cream doubles in volume and is thick enough to softly hold its shape. Beating constantly, slowly pour in egg mixture and beat thoroughly. Slowly add whiskey, rum and old milk, beating constantly. Sprinkle top with grated orange and lemon rind, then ground nutmeg. Chill at least two hours, or overnight, before serving. 4 1 casserole. Add above ingredients. Stir well. Sprinkle generously with nutmeg. Bake at 350 degrees for 2 hours. After first hour, prick top with a fork to avoid boiling over. Do not cover. Thoroughly grease a two-gallo- GROG To make one drink: 2 Tis the season to eat, drink and be merry! Place sugar, cinnamon and lemon slice in warm glass, add rum. Stir with spoon to dissolve sugar and leave spoon in mug so it won't t rack.
