"Prospects for canning peaches are very good this season and housewives should take advantage of the abundance of the fruit by canning a large supply for next winter. The canning though should be done in the most economical way to save on the sugar supply," Miss Miller remarked. According to the extension nutritionist the most economical way to use the canning allotment is to slice the raw peaches, heat them, then pack them hot in thier own juice and process them. The sugar should be put directly on the peaches before they are heated to draw out the juice. Slicing peaches to can them is recommended over halving because it allows for extracting more juice for canning and also for getting more fruit in each jar. . .which is important in view of the shortage of containers and rubber for canning pur poses, the extensionist said. "However, if you do want your peaches canned in halves, make a syrup to pour over the peaches in the jars. Process in the same manner as sliced peaches canned in their own juice. Use the proportion of five cups of sugar to a gallon of water. This makes a light sirup, in accordance with your sugar ration," Miss Milkr stated. Use of honey or corn syrup as a substitute was also advised by the nutritionist.
