A few cooks knew and approved of wine as an adjunct to fine flavor in the days before the war but to many the delicate perfection which could be achieved by just the right combination of spirits and more ordinary ingredients was a closed book. Wine and beer soups, for instance. in-stance. Did you know that yon can serve them in your own homo at a mini mu in of expense and trouble? trou-ble? Borrowed from Cerniany is the delicious coneoction known as white wine soup which is made as follows: White Wine Soup One pint light white wine. 2 cups water. 1 stick cinnamon. -cloves, 2 slices lemon. 4 tablespoons table-spoons sugar. 1 tablespoon cornstarch. corn-starch. 1-2 teaspoon salt. 2 eggs Add cinnamon, cloves, sugar and lemon slices to water and boil five minutes. Heat yolks ot eggs well with 1 tablespoon wine and stir in cornstarch carefully to avoid lumping Add wine to boiling boil-ing Mater and bring to boiling point. Stir egg mixture into this, stirring vigorously Stir constantly con-stantly and bring slowly to the boiling point. Remove at once from the fire and skim out lemon slices, cinnamon and cloves. Add salt and whites of eggs beaten until un-til stiff and pour into tureen for serving.
