The taste is of apples, ap-ples, of sweet potatoes, of orange and cinnamon ... all wonderful with pork, Indeed it is fine eating eat-ing with any meat and with chicken or turkey, too. Canned apple sauce makes this the special dish it is. The apple sauce lends refreshing apple zest and flavor. Paired with the canned apple sauce are canned sweet potatoes. Both are foods that come ready for action. Just open the cans or jars and in short order your puff is ready 1 for the oven. APPLE SWEET POTATO PUFF 2 tablespoons sugar 1 teaspoon cinnamon 2 cups canned apple sauce 1 tablespoon grated orange rind 3 cups mashed sweet potatoes, . cooked or canned teaspoon salt cup melted butter or margarine mar-garine 4 eggs, separated Combine sugar and cinnamon; add to apple sauce with orange rind; mix well. Combine sweet potatoes, salt, apple sauce mixture mix-ture and butter or margarine, Add beaten egg yolks. Beat egg whites stiff; fold into apple sauce sweet potato mixture. Pile lightly light-ly into greased 3 quart casserole. Bake in hot oven, 400F., 45 minutes. Serve immediately. Yields 6-8 servings. |
