APPLESAUCE NUT BREAD 1 34 cups sifted all-purpose flour 2 teaspoons baking powder 34 teaspoon salt 12 teaspoon cinnamon 14 teaspoon nutmeg' 1 cup sugar 112 cups Wheat Chex cereal crushed to 34 cup 13 cup raisins, coarsely chopped 12 cup chopped walnuts 1 egg, slightly beaten 3 tablespoons vegetable oil 112 cups applesauce Preheat oven to 350O. Grease an 8 12x4 12 x 2 12-inch 12-inch loaf pan. Sift together flour, baking powder, salt, spices and sugar. Stir in cereal, raisins and nuts. Combine egg, vegetable oil and applesauce. Add to dry ingredients and stir just until moistened. Turn into pan. Bake 70-75 minutes or until done. Let cool 15 minutes before removing remov-ing from pan. Makes 1 loaf. TOPPINGS: Blend 1 package (3 oz.) cream cheese (softened) with 1 12 teaspoons powdered sugar with 1 teaspoon frozen orange juice concentrate 2 teaspoons marmalade OR 34 teaspoon rum extract OR 1 teaspoon brandy Swirl 1 12 - 2 teaspoons on each bread slice. Garnish. Makes enough for 3-4 slices. |
