Show GLAZED CHSCKEN IS FESTIVE ENTREE A W Chicken is still a good buy at the meat counter and it can be regal company fare. Next time you plan to star it for a special occasion, glaze whole, chickens with a mixture of corn syrup, white wine and a choice selection of herbs and seasonings. It tastes delicious and looks elegant. It is delicious de-licious served with a casserole of yams, carrots and prunes baked in light syrup mixture, and delicately thickened with corn starch. HERB GLAZED CHICKENS 1 cup Karo dark corn syrup 2 teaspoons grated lemon 1 cup dry white wine rind 1 tablespoon salt 2 tablespoons lemon juice 4 teaspoons rosemary 2 (3'2 to 4-pound) whole leaves, crushed fryers or roasters Stir together corn syrup, wine, salt, rosemary, lemon rind and juice. Brush inside of chickens with mixture. Truss chickens and place in shallow roasting pan. Bake in 375"F. oven about 1 Vi hours or until well glazed and tender, basting frequently with sauce during last 30 minutes. Heat remaining sauce to serve with chickens. Makes 8 servings. |
