Show f A Man's Dessert Treat, Cheesecake-Berry Pie I - x V ' i pap-- ri13g? f - 1 Cheesecake Pie is a man's treat rich, luscious, and full-bodied. Yet the lady of the house will like It too, not only for the new and wonderful eating qualities, but for the ease in preparation. This recipe, developed this year for "June is Dairy Month," combines com-bines a cooky-like crust with a cottage cheese, pineapple, whipped cream filling. Frozen strawberries are spooned over each piece, making every bit tempting with red sweetness. If a description isn't enough to woo you into the kitchen, read on: the crust is easier than regular regu-lar pastry since there is no need to cut in shortening or to roll out the dough. Biscuit mix, butter, but-ter, and milk are blended together, to-gether, then the dough is patted into the pie plate. As for the filling fill-ing .. . simply mix all ingredients ingre-dients together. Cheesecake Pie Is nice to serve when family supper menu is light or whenever dessert appetites are hearty. CHEESECAKE PIE Crust 1 cup Bisquick Yt cup soft butter (Vi stick) 3 tablespoons boiling water Add boiling water to butter and Bisquick in 9" pie pan. Stir vig- orously with fork until dough forms a ball and cleans the pan. Dough will be puffy and soft. With fingers and heel of hand, pat dough evenly into pie pan, bringing up dough to edge of pan. Flute edges, if desired. Bake 8 to 10 min. at 450. Filling 12-oz. carton cream-style cottage cheese Yi. cup sugar Y teaspoon salt 1 teaspoon vanilla 1 cup whipping cream 9-oz. can crushed pineapple, drained Whip together cheese, sugar, salt, vanilla, and cream in mixer until stiff. Fold in pineapple. Pour into freezing tray, freeze 2 hours, spoon into baked crust; or spoon mixture into baked crust and freeze for 2 hours. Spoon sweetened strawberries over top. If desired. Cut In wedges to -serve. |
