An apple a day may not always al-ways keep the doctor away, but t should keep the pill box away and help to keep the family healthy, especially if the fruit is thoroughly washed and the eki'ns are left on, says Elna Miller, extension ex-tension nutritionist ot the Utah State Agricultural college. The apple is a Utah product; It is inexpensive, is accessible most of the year and has a variety var-iety of uses. Eaten raw, the apple given the teeth some necessary exercise and polishing. White apples have some mineral miner-al content;- they are more valuable valu-able for their type of cellulose which adds needed bulk to keep the food moving along the digestive diges-tive tract in a non-irritating manner, man-ner, Miss Miller points out. The apple is one of the most versatile foods. The easiest way to serve it, and perhaps the most nutritious way, is to give it a thorough bath and eat it raw. However, for those who like a greater variety and more work, the apple may be served for any course of the meal, for any meal of the day. Apples have their place in cocktails, salads, with the meat course, for dessert; and cider has many possibilities for delectable drinks. For a cocktail, select apples which keep their shape when cooked. Rowe, Beauty, Delic-ious, Delic-ious, Jonathan, Pearmain and Winesap are in this class. Balls may be cut from the apples by using a ball-cutter or a small measuring spoon; or the apples may be cut into cubes or triangles triang-les and cooked in a thin syrup until transparent. Coloring may be added if desired. Cider punch made from the folowing recipe, recommended by Miss Miller, affords a good variation: varia-tion: 4 cups sweet cider, 4 tablespoons table-spoons lemon juice, 2 tablespoons sugar, 3 sprigs crushed miht leaves or 4 teaspoon mint flavoring. flavor-ing.
