Show HOW TO KILL CHICKEN illustrations SHOW MANNER OF GRASPING FOWL thirty per cent of poultry on now new york market Is incompletely bled resulting in loss of 2 to 5 cents per pound i by the united states depart hiona f of agriculture I grasp grap the chicken when killing by tie the wily bouy part pa rt of the skull do not let the tie fi fingers rigers touch the neck mako a small andall cut with a small sharp pointed knife on the right bide of the root roof of the he chickens chicken a mouth just where the bones ot of the skull end drain brain for dry picking ing by thrusting the knife through the groove which runs along the middle line dihe of the root roof of the mouth until it touches tou clies the skull midway between the eyes ees use uee a knife which Is not more than two inches long one fourth inch wide with a thin hat flat handle hand a sharp point and a straight cutting edge the above instructions on the proper methods ot of killing poultry were issued by the department of agriculture at least 30 per cent of all the poultry coming into the new aorl market la Is incompletely bled much of it la Is so badly bled that it results in a loss of from to 5 16 cents LL a pound as compared with the corresponding poultry which la is well bled and ln in external good order con can head and nock the depart part showing positron Poal Posit llon lon ment aside from of veins the bad appearance of incompletely bled chickens their keeping properties leg are very interior inferior the flesh loses its ita firmness sooner its flavor Is not so good the th e arr buur rya 0 ir 4 lower jaw of fowl removed A odor of stale flesh and finally of putrefaction tre re comes sooner and in every way ay the product Is more mora perishable A very large proportion of tile the unsightly poultry in our markets aside from the rubbing and tearing of the skins is caused by an incomplete removal of the blood this Is evidenced by red dots which frequently occur where the feathers have been removed specially over the thighs and wings or by b the small veins which are seen over 01 cr the breast and in the angles ot of lia ilia wings or larger veins which mar the appearance of the neck two sketches of a chickens bead are here shown from which the lower jaw aft has aas been removed the lower jaw or f the oe chicken is much longer than the boak it runs back to a point just juet below the ear where the hinged joint can cain bp be felt the skin which makes the corrier corner of the mouth and limits the length of the beak ends Is indicated in the he anatomical drawing I 1 V showing angle of jaw B marked A the skin and lower jaw have ae been cut away in order that the I 1 position Polsi tion cf the velna veins which lie far back or of the root of at the mouth and lut lt li eplow allow its surface may be seen the e pexie which occurs in the root roof of 0 tho the chickens mouth la is a 06 buldo tc the position of the blood vessel I 1 it is de to t cut ekls point belta belli behind and to the left of the end nd of 0 the groove when tho the chicken to Is held head down and with tile the lower side eldo or of tile the head uppermost the direction and position ot at tile the cut which la is to sever tile the veins Is shown in figure 2 2 2 to be on the left side of the chickens head when in tile the position just do de bribed it will ivill be observed that thal just in front ot of the line which indicates tho the point nt at which these velna veins are to bo be cut they divide into two small email branches the courso course of which Is not further shown this Is because they very soon boon pass through small holes boles in tho P 4 location of cuts in mouths of badly bled chickens lower jaw removed bone and go into the inside of tho the skull and into the deep tissue where they are quite safe from the killers knife it these large veins are to bo be severed the cut must be made far enough back to reach them before they penetrate the bones bonea of at the skull on the other hand if the cut Is made too tar far back and over the edge of the skull as Is shown in connection wilh the illustration much of the blood will settle in the loose tissue of the neck instead of running out of the mouth thereby clogging the vessels and preventing complete bleeding as well as making unsightly discolored areas in the neck near the head bead delow Is shown the position of a chicken ready for killing and held by the feet in a U shaped shackle notice tice that the thumb of tho the killer to la pressed firmly down on the head just below and behind the ear in the space to which attention was called when discussing the bones of tho the skull here too Is the hinge of tile the jaw pressure of the thumb on ono one side of this portion of the skull and on the other elde at the same place with the forefinger or with the forefinger and second finger will result in opening tho the chick chickens ens mouth and holding it open while the operator makes the cut to bleed held in such fashion there Is nothing to obstruct the blood vessels thereby preventing the blood from escaping even though these vessels be cut the position of the knife in tho the mouth which is shown by the dotted tine line needs no further explanation the knife itself however Is very different iron ron that ordinarily used in the bleeding of chickens the knife in common use Is much too large both too long and too broad for the most moat successful work ineffectual cutting due to a lack of knowledge of at the structure of the chickens neck and head the use of force rather than skill on the part of the operator and a knife III adapted to the work which it has to do Is illustrated by the cut above which shows I 1 0 Z correct grasp of head at angle of jaw and position of small knife when cutting vein some of the most common types of cuts in badly bled chickens A study of tinse anese illustrations indicates very plainly why these chickens are badly bled the lower jaws from these heads were removed so that the tha position of the cuts could be noted head A has had two cuts one bas baa run parallel with the connection between the two veins and very close to it but has not cut iland it and another has run from tho the angle of tho the mouth too close to the point where the blood ves vessel set on t the bc left side of the head breaks into the two smaller vessels and penetrates penetrate s the bones of the skull the only vessels CIS which were cut in this chicken were the small superficial veins supplying tile tho roof of tile tho mouth and from which vili cli tile the bleeding amounted to almost nothing head K B chows a cut in ine direction but it did not go quite far enough back to reach tho the veins at their junction head A in the cut shows tho the cross cut which la jo advocated by so many killers in this case it was made too tar far front doth both of tho the large veins escaped and only ane small vessels of at the root roof of the mouth were disturbed D B Is a good illustration of indiscriminate cutting by a badly directed knife which in all probability was far too large fince the upper cut extends all the way across tile the root roof of the chickens mouth and almost as far front as the beak another cut which partly follows tol tile the groove in the root roof of the mouth would indicate that tho the scillar had bad tried to make ft a cross cut |
