ERNEST HARMER Marshmallow Roll Ideal For Spring Good cooks ate usually genial folks with something of their dispositions seemingly going into the good things they make. Mrs. Ernest Harmer is no exception to this rule. She loves to cook things people love to eat and is happy doing it. Her reputation as a good cook is vouched for not only by members of her family but a host of friends. One recipe which she likes to make, especially at this time of year when desserts are hard to think up, is Chocolate Marshmallow Roll, the recipe for which follows : CHOCOLATE MARSHMALLOW ROLL 4 eggs 1 cup granulated sugar 4 tablespoons cocoa. cup pastry flour 1 teaspoonful baking powder 1 teaspoonful vanilla 2 tablespoons milk. Separate eggs and beat yolks until light color. Add sugar and continue beating until all sugar is well mixed with egg. Add dry ingredients in-gredients which have been sifted together. Then add vanilla and milk. Fold in stiffly beaten egg whites and turn batter into dripper drip-per pan. Bake in moderate oven, 350 degrees, 15 minutes. Remove from oven. Turn cake on damp cloth and trim edges. Spread with marshmallow icing and roll like jelly roll. Prepared marshmallow icing which comes in glass jars may be used on the roll, or icing made as follows: IV2 cups sugar y2 cup white syrup Boil until soft ball forms in cold water. Add boiled mixture to 2 egg whites beaten stiffly, and beat until of spreading consistency. MARSHMALLOW ICING 1 1-3 cups sugar 12 cup cold water 1 tablespoon light corn syrup 1 egg white 6 marshmallows 1 tablespoonful vanilla. Cook sugar, water and corn syrup until Softball forms in cold water. Beat egg whites stiffly, add marshmallow, then boiled syrup, very slowly beating constantly. con-stantly. Add flavoring and beat until of proper consistency for spreading. |
