Show COCONUT CANDLE CAKES While the Easier bunny naps, this cocky little Huck presides at your Easter table over ihe Coconut Caudle Cakes. sz T3 "1 2 cups sifted cake flour -r-plf 2 teaspoons double-acting baking powder r, Vt teaspoon salt V4 enp butter or other shortening f'(tj C 1 cup sugar S- i J.i, Ty 2 eS9 . unbeaten "CZ P'-'H cup milk 7?i.nTi;-'' '"L teaspoon vanilla t- T ' -- - l can moist, sweetened coconut Sift flour once, measure, add baking powder and salt, and sift together three times. Cream shortening, add sugar gradually, and cream together until light and fluffy. Add eggs, one at a time, beating well after each. Add flour, alternately with miik, a small amount at a time, beating after each addition until smooth. Add vanilla. Turn into greased muffin pans, filling them V4 full. Bake in moderate oven (375 F.) 20 minutes, or until done. Frost with fiufTy frosting and sprinkle thickly with moist, sweetened coconut. Arrange ca':es on large platter and insert candle holder with tiny colored candle in each c:ke. Light candles just before serving. Makes 2 dozen small or 15 large cup cakes. |
