Show Warm Weather Soft Cookies ! m7 - . I m Children expected? Oatmeal cookies are in order. And a party setting of some kind. Glass cups, holding red fruit-flavored gelatin gela-tin "set on a slant" are the party 'surprise.' Stack a circus elephant ele-phant pretzel-stick with these chewy oatmeal cooky rings. Use the stick to store the cookies as well as to serve them, because the recipe bakes up soft and tender, and the flavor seems to improve in the humid air of July. Breakfast cereals are excellent for ingredient in-gredient use in recipes and make nutritional contributions of protein, pro-tein, important B vitamins, essential minerals, and food energy. Lemon Pecan Oatmeal Cooky Rings 1 cup sifted flour 1 egg teaspoon soda 1 tablespoon grated lemon Yz teaspoon salt v rind VSs cup soft shortening 3 tablespoons lemon juice cup brown sugar, packed li cups rolled oats V2 cup granulated sugar tfa cup coarsely cnoppea pecans Combine flour, soda, and salt; sift into large bowl of electric mixer. Add shortening, sugars, egg, lemon rind and juice. Beat at medium speed with electric mixer or by hand until smooth, about 2 minutes. Fold in rolled oats and pecans. Mix well. Turn level tablespoonfuls onto well-greased baking sheet 2 inches apart. Make a hole about 1 inch in diameter in center of each cooky, using the back of a small spoon or the handle end of a washed wooden spoon. Shape into ring with fingers. Bake in a moderate oven (350F) until done and lightly browned, 10 to 12 minutes. Remove from baking sheet at once and cool on wire rack. Yield: About 2Y2 dozen cookies. |
