Daring our recent stay in San Francisco, we vi.-ited the establishment where thi3 nutritious article is manufactured, and were surprised to find so much capital invested and so much machinery employed em-ployed in the manufacture of so seem i ig'y Muiplean article as chocolate. Ghiradclli's chocolate, coffee, and 9p:co mills were started in 1S52, and , arj now the only works that manufacture manufac-ture chocolate, cocoa, and broma, on the PjcitL' coast. Other esuiblL-hments hive been atirted but sooner or later they have been bought out and absorbed absorb-ed by Gbirardelii, who has now a monopjly of the business. The amiunt of capital invested in machinery is $15,000, and in the whole business $50,000. The raw cocoa berries ber-ries arc taken in at one end of the factory fac-tory and in passing through are roasted, roast-ed, ground, pulverized, mixed with iugar, dissolved into paste, weighed, made into cakes, and dried, all of which is accomplished by machinery with very littlo manual labor. Eight different kinds ot chocolate are made, which sell from twenty-fiva cents to a dollar per pound, according to qualiiy. They also prepare several kinds of coco? for drinking purposes, and cocoa paste which is very largely used by confectioners. Broma, or powdered chocolatc.is also an article of their production. pro-duction. In the preparation of all these, great attention is given to cleanliness and purity of material. A marked feature, of the goodj is tho elegant style in which they are put up and labelled. Many of the wrappers, boxes, and labels, are so artistic that they cannot bo made in this country and have to be imported from France. The excellence of theso preparations has been acknowledged wherever te6tcd as numerous first premiums received re-ceived by the manufacturer ccitify. The chocolate and coco of this establishment esta-blishment aro shipped not only al over the 1'aciGc Coast but have found their nay to tbo eastern States, and largely to Mexico, China and Japan. This firm also manufacture ground coffee and all the various kinds of prepared spices. Mr, Ghirardelli is desirous of introducing intro-ducing bis manufactures into this market, and wo bespeak: for them a favorable reception and a fair trial at the hands of our merchants. |
