Go out to your garden or stop by the farmers market to get some fresh zucchini, then try it in this delicious recipe that has been modified to be healthier of than the original version (courtesy EatBetterAmerica.com ). Prep Time: 25 min. Start to Finish: 2 hr. 35 min. Makes: 2 loaves (12 slices each) • 2 1/2 cups shredded zucchini (about 2 medium) • 1 cup unsweetened applesauce • 1/2 cup canola oil • 3 eggs • 2 teaspoons vanilla • 1 1/2 cups sugar • 1 1/2 cups all-purpose flour • 1 1/2 cups whole wheat flour • 3 teaspoons ground cinnamon • 1 teaspoon baking soda • 1 teaspoon salt • 1/4 teaspoon baking powder • 1/2 cup chopped walnuts or pecans 1. Heat oven to 350°F. Spray bottoms only of two 8x4inch loaf pans with cooking spray. 2. In large bowl, mix zucchini, applesauce, oil, eggs, vanilla and sugar until well blended. Stir in remaining ingredients except walnuts until well blended. Stir in walnuts. Spoon batter evenly into pans. 3. Bake 50 to 60 minutes (65 to 75 minutes at high altitude) or until toothpick inserted in center comes out clean. Coo110 minutes. Loosen sides of loaves from pans; remove from pans to cooling racks. Thank you. by Jan Kraig and I, along with our youngest son, Tyler, recently accompanied our oldest son, Devin, up to Logan where he will be attending Utah State University. He'd been "getting ready" for several days before hand, a few weeks, really. He and Kraig purchased a laptop, a docking station and a monitor. They'd talked about finances and what we'd help with and what he'd have to pay for. I took him shopping for some new jeans, a few shirts, underwear and sox. We bought some pens and pencils, paper and notebooks; plastic plates and cups and an inexpensive set of silverware. I made sure his clothes were washed and I got him some laundry soap and softener and made sure he knew how to sort the lights from the darks. We even went over the basics of how to cook a few simple things other than cheese tortillas. But summer break was gone too soon and then it was time for him to go. It was a trip I had been contemplating for weeks. I had envisioned helping him... unpack his stuff; put his nicely folded jeans and t-shirts in the drawers; organize the few pots and pans and silverware in the kitchen cupboards; get the brand new, freshly laundered sheets, with that just-washed-by-mom-smell put on his bed. Over the summer I had imagined getting him settled and taking him to the store to pick up some of the basics — salt, pepper and sugar; bread, milk and punch; Top Ramen®, Rice-a-RoniO and hamburger. We'd pick up some of the things that no one else brought — perhaps a toaster, a broom, dish soap and cleanser. I anticipated feeling a lump in my throat, a tightness in my chest and tears roll down my cheeks when we said good bye and left him there, alone, on his own. Boy was I mistaken. Kraig, Tyler and I helped Devin unload his car. We hauled in the boxes, the bags and the laundry basket that was filled to the brim. Kraig and Tyler set up the computer; Devin helped me make his bed. He let me put his toothbrush, toothpaste, towels and shampoo in the bathroom cupboard and some of his school supplies in a desk drawer. We made quick trip to a big box picked up a case of water, a huge bag of rolls, some spaghetti noodles and some entrees that could be warmed up in the micro-wave. But that was it. He didn't want me to unpack his jeans or fold his shirts. He didn't want me to get his sweatshirts out of the box or the stuff out of the laundry basket. He wouldn't let me put any of the kitchen stuff in the cupboards or the silverware in the drawers. "I can do it myself, mom! Later. I don't want to unpack now!" We took Devin and his high school friend, Emerson out for a bite to eat, then we dropped them both off in front of Em's dorm. "Just a minute!" I said as I climbed out of the car. "I at least get a hug!" As we pulled away from the curb, I watched as Devin and Emerson headed across the grass with an almost visible skip in their step. The day hadn't gone at all like I had planned. I didn't get to do all the mom things I thought I would do. I didn't get choked up. I didn't get weepy. I didn't even shed a tear. Instead, I felt a sense of pride well up in my chest and a sense of excitement for the adventure on which Devin was embarking. He was truly leaving the nest and spreading his wings. Now I just have to let him go, knowing he'll fly just fine on his own. Good luck, Devin. I love you. Tyree Lazenby and Maya Gomez will be celebrating their marriage on Saturday, Sept. 10.
