All peraona who in any way come in contact with tho milk or milk apparatus should bo freo from communicable diseases and not be carriers. A minimum of human contact should bo Insisted Into clean, sterilised palls, seamless and with a email mouth ao aa to keep out dust and dirt which falls from tha udder und belly of tho cow. Strulnera should be cleaned and boiled morning nnd evening. Cana and palls should bo cleaned with washing soda or alkaline powder, (not soap,) rinsed in clean water and then steamed or boiled or chlorine eternised. 6. The milk should bo chilled to 60 degroeo F. or under at once, nnd kept protected from fliee, dust, odors, and contamination, in a clean milk house until collected. A wooden puddle should not bo used to stir tho milk. If stirred a metal paddle Is preferable. 6. The milk should bo kepi cool until used, preferably at about 60 degrees F. 7. All apparatus at tha dairies, such as tanks, clarifiers, separators, pasteurisers, nnd bottling machines, should bo kept scrupulously clean and sterilised daily wUh steam or chlorine. 8. Pasteurisation at 142 degrees to 146 degrees F. for not less than thirty minutes should be followed by rapid chilling anu tha milk kept below 60 degrees F: until delivered to tho con snmer.
