They are Nutrition & Food Science, Home Economics & Consumer Education, and Family & Human Development Within each department the focus of their programs and research is on current issues that impact families. In Nutrition and Food Science, students are prepared for careers in medical dietetics and food science. The dietetics emphasis is increasingly on community trition and health care programs. They deal with health maintenance and prevention of chronic diseases such as high blood pressure. Dr. Carol Windham has a grant to do research on consumers' interest in current health issues as they apply to red meats. Entry level food science jobs are going unfilled. Starting salaries for Food Scientists are comparable with those of engineers. Graduates with a Bachelor degree most commonly become plant managers or go into research. For individuals interested in chemistry, engineering, microbiology, food product development, processing, preservation, packaging or distribution may want to explore careers in the Food Science area. Dr. Rodney Brown, Head of the Food Science Department, said that many students with an interest in agriculture are now going into the processing end of agriculture. New within Nutrition & Food Science is a new undergraduate nutrition science emphasis. This is designed for those desiring a general nutrition background for preparation for such areas as pre-me- d, biological sciences, or nutrition. This new Miphmk is expected to be offered beginning in January of 1987. A program is offered in Interior Design in the Department of Home Economics & Consumer Education. A Fashion Merchandising program is also offered to prepare students for careers in huge retail fashion industry. Not only are students prepared to teach home economics at the junior and senior high school levels, they are also prepared to teach adults and youth in the University Extension program.
