"That way, you get most of the nutrition of the beans without the gas, Lauritzen says. She adds that beans have the desirable characteristic of being easy to store. Dry beans are less expensive than canned, precooked and approximate cooking times. Soaking: To replace the water taken out of dried beans, you need to soak them. Lentils and split peas dont require this process, but for most beans, each cup of to 3 cups of dried beans need 2 water to rehydrate. Soaking times vary, but soaking overnight is usually enough. Quick soak: Add 6 to 8 cups of water to each pound of dry beans. Bring to a boil and then let simmer for two minutes. Remove the pot from the heat and let stand for one hour. Drain the beans and then cook as if they had been presoaked overnight. Pressure cookers: A pressure cooker can save both time and en- ergy. Presoaked beans can be cooked in about 20 minutes at 10 pounds of pressure. At 15 pounds, most beans will cook in 10 minutes. In general, Lauritzen says, the long, slow method produces the most tender, uniformly cooked beans.
