It combines the golden good- ness of eggs with wholesome milk, and flavor ingredients that t excite the palate. Use Lemon Cream filling in either plain pastry or graham cracker crusts. With pastry shell, top with delicately-- . browned meringue, i Filling! 1 cup sugar i 5 tablespoons cornstarch , Vi teaspoon salt 2 cups milk ' 3 eg yolks, slightly beaten j ' Soft Meringue i ' 3 egg whites Vi teaspoon lemon extract V teaspooa'salt or 1 teaspoon lemon juics ' 6 tablespoons sugar , , Mix sugar, cornstarch and salt. Add milk gradually and stir until smooth. Cook over low heat, stirring :onstantly, until thickened throughout, about 10 minutes. Stir a small amount of hot mixture into egg yolks, stirring constantly. 'Combine with remain injj hot mixture. Continue cooking, stirring constantly, about 5 minutes. Remove from heat. Add butter, lemon rind and juice; blend thoroughly. Set aside while preparing the meringue. Meringue: have egg whites at room temperature. Add salt and lemon extract or juice to whites and beat to coarse foam. Add sugar in portions, beating constantly until stiff and glossy. Pour filling into, baked pie she'll. Pile meringue on filling, sealing to edge of crust and swirling top. Bake at 350F (moderate) until golden brown, 12 to 15 minutes. Cool before cutting.
