While the human body has natural defense mechanisms in place, the free radical sub well-kno- stances possess the potential to damage key components such as DNA, proteins and lipids or fats. Antioxidants are capable of stabilizing free radicals before the substances can causenarm in much the same way as coating sliced apples with ascorbic add or vitamin C will prevent browning. Research results implicate free radicals in the development of a number of degenerative diseases. Examples indude several forms of cancer as well as cardiovascular disease, cognitive impair- ment and Alzheimer's, immune dysfunction, cataracts and macular degeneration, according to information gathered by the international information organization. Consumption of green and black teas provides rapid absorption ofcatechins, a polyphenol antioxidant that helps to maintain cardiovascular healthand may reduce the risk of some cancers. Until recently, it appeared that antioxidants were almost a panacea for continued good health, spawning a huge industry attempting to meet consumer demand, according to the media reports and data released by various health organizations. But additional research studies probing into the mechanisms of antioxidant action indicate that a more complex story needs unraveling, adds the International Food Information Council. For example, there are indications that certain individuals like as smokers should not cone sume supplemental beta carotene. Direct experimental evidence from randomized trials remains deficient, leading to different recommendations for different populations. The American Heart Association, while encouraged by results of clinical trials of vitamin E, does not recommend supplements. Instead, the heart research organization advises the general population to consume a balanced diet with emphasis on antioxidant rich fruits and vegetables and whole grains until future studies confirm the initial positive findings. On the other hand, the National Academy of Sciences Food and Nutrition Board recently increased the daily recommended intake for vitamin E. But meeting the higher recommended levels high-dos- of vitamin E may be difficult for Carbon County residents to achieve, considering the average daily diets of consumers across the United States. Medical research indicates there are overall health benefits for people incorporating the consumption of antioxidant rich foods into daily diets. The results of clinically conducted trials support the benefits of antioxidant supplements, but the findings of the medical research are inconsistent, explains the national information council. Current recommendations by health professionals are to consume a varied diet with at least five servings of fruits and vegetables and six to 1 1 servings of grains per day.
