Recipe Corner Rolo Cookies “Yummiest Ever” Thanks Ashley! 1 lb. butter 2 cups brown sugar 2 cups white sugar 3 eggs 1 tsp. vanilla 1-1/2 tsp. soda 1-1/2 tsp. salt about 6 cups flour about 1 cup cocoa powder 6 dozen Rolos(R) candy Sugar and chopped nuts (optional) to roll cookies in… Cream butter and sugars, add eggs and vanilla, mix well. Add soda, salt and 4 cups of flour, mix. Add enough cocoa until brown and tastes chocolatey. Add enough of remaining flour until dough is no longer sticky. Roll enough dough around Rolo piece of candy to make into a ball. Roll in the sugar and nuts (nuts optional). Bake at 375 degrees for ten minutes. Makes 6 dozen cookies. I didn’t forget about Mother’s Day; I just didn’t realize it was “just around the bend” when I wrote last week’s column. “Just Stuff” is supposed to be in to the editor the Friday before the paper comes out, which is the following Tuesday. Consequently, Thursday night, when I wrote last week’s column, was not the Thursday just before Mother’s Day Sunday.) At the time, Mother’s Day was still more than a week away – it wasn’t time for a Mother’s Day column. It didn’t dawn on me until last week’s paper came out and I saw all the ads promoting the Mother’s Day specials that my timing was off. So, even though I’m writing my “Mother’s Day” column before Mother’s Day, by the time the paper hits the streets, it will be a thing of the past. Since I’m writing this BMD (before Mother’s Day), I can’t even write about how wonderful my boys and my husband treated me on Sunday (I’m sure they will); what a great breakfast they fixed for me Sunday morning (it’s a tradition); how helpful they were around the house (I’m sure that will be the case); what great presents they gave me (I think some new ear-buds for my i-Pod are in the works); or how cheerful they were when I asked them to finish their homework and clean their rooms (OK, I’m probably being a bit too optimistic on that one). But I know it will be a great day, because I have great kids and a wonderful husband. Oh, I grumble a bit about my boys. One’s a teenager and the other just turned 12, so he’s a “tweener” and in training to be a teenager. Their rooms are too messy. They eat too much junk food. They do homework in front of the TV and text their friends at the same time. They leave their clothes on the bathroom floor and don’t pick-up their towels. They forget to take out the garbage and empty the dishwasher. They don’t like having to pick-up the dog poop from the yard and they fight with each other most of the time. They’re typical boys. But they’re good boys. They’re mischievous, but they don’t get into real trouble. They complain about school and homework, but they get good grades. They grumble about cleaning up the yard, but they do it. They don’t sass or talk back and they respect others. And I love being their mom. It isn’t always easy and it isn’t always fun. But it is most of the time. And it’s always rewarding. It’s amazing to think that Devin will soon be in high school and Tyler in junior high. It seems it was just yesterday when they were playing in the dirt, riding their bikes and needing me give kisses to fix their owies. Now, they “hang with friends,” surf the net and my kisses no longer fix the owies. I am so lucky to have been blessed with two beautiful boys who are growing into fine young men and who love me unconditionally and trust me absolutely. I love them with all my heart. They are the sunshine of my day, the light of my life and they will be, always and forever. And I thank them for giving me the privilege of being their mom.
