These glazed vegetables are chiefly for decorative purposes, but are also delicious to eat. Ihe glazed vegetable in generally considered con-sidered a "fussy" thing to prepare, and therefore the average housekeeper in this country usually tak-s little interest inter-est in its preparation. This is ti mistake. Onions and ear-rots ear-rots are easily prepared for this purpose, pur-pose, and used the year round. To glaze onions select a dozen white on ions of large size, lioil them. Toss the onions in the butter until they tire delicately and evenly colored. Cover them with n little lit-tle stock and cover the saucepan they are in with a close cover until the stock boils to a glaze. It is n pood plan at this stage to put the onions in (he oven mid let them glaze there, liasting them .very n minutes. Use them around meal or any vegetable they ere needed irotind. Young spring earreits are use'd in preference for glazing, lloil them tender and turn them in small, even slut pes- i-ork shapes. Put 40 small carrots of the tiny French variety varie-ty sold in the spring in a saucepan in half a pint of broth, a teaspoonful of alt and n teaspoonful of sugar. Put the saucepan, closely covered, on a quick tire and let tie broth eil down for 20 minutes, when they shoultl be well colored. Large carrots should be ut. in two-inch lenpths before conk-ng conk-ng and glazing them. Turnips can be : ut into cork-shaped pieces one inch thick by two inches long and glazed much the same wny carrots are. Either if these vegetables may be prepared wlrto or brown, according its they are Med in butter and cooked in stock, or simply partly cooked again till done in another water, w ith a pint and a half of vvater, a tenspoonful of salt and leusponnful of sugar.--..
