Show Kitchen Kapers March 25, 19X2 - The Springville Herald - Page Five A Gut 'costs with "home made" Mary Ella Arnold Now that we have officially welcomed Spring; at least that's what the weatherman anil the calendar says, our minds can be turning to salads, salads and other things like the pretty Robin redbreast, the crowning crocus and the nodding daffodils and the stately tulips. So. I thought you might enjoy a few salad dressing recipes along with a couple of other odds and ends that may le useful With lower calories as well as lowering our cholesterol in mind, I'll share with you my mayonnaise recipe thai I have made for years and years. It "s amazing how much can be saved by making some of your favorite dressings. All of them are made quickly and keep for several weeks if they are kept refrigerated. ISI.KNDKH MAYONNAISE I egg 2T. lemon juice or vinegar :i tup Safflower oil ': Jsp.'sugar 1 ' 4sp salt ;- - , 3sp. dry mustard !;'; Combine all ingredients in blender buCoil. Add only 1 icup of oil. Cover and blejid until mixed well or until all oil is absorbed. Remove center portion of lid an2 pour remaining oil in very slowly. Wljcn all oil is absorbed pour in a pint jar; and refrigerate. ;This only takes three or four minutes to make, but you wifl probably want to keep making it often as it has a non-greasy taste and defjeious flavor. The lemon juice is tasjlier than the vinegar, and of course tho fresh lemon juice improves flavor also. For those of you who like a slightly spfcier flavor add 1 1 tsp. paprika. Also if you don't have a blender a hand miner will work just fine. I LOW-CALORIE SALAD k DRESSINGS IDEAS dd finely chopped onion, garlic salt or'powder, dry mustard, and pepper, th jme and basil to red wine vinegar. Just add desired amounts, but repiember to always start out using snaall amounts first. Spices and herbs harye a very pronounced flavor and can beoverdone easily. Add Worcestershire, vinegar, green pejpper, garlic salt or powder or minced gafirlic. dry mustard, salt if desired to lofnato juice. Shake well. You can add a little corn starch and cook until it gets tofyour desired thickness. Pour into IxQtles. cruets, or whatever and refrigerate. Both of these recipes are good over ai green salad. You can make any combination of cooked vegetables also such as green beans, carrots, cucumbers and etc. and use these recipes effectively also. LOW -CALORIE ITALIAN DRESSING one third pint wine vinegar onc-lhird pint vegetable oil I Isp. sugar or substitute I I tsp. coarse ground pepper I tsp. salt I I Isp. garlic powder ST. parmesan cheese Mix all ingredients together well in jar. You don't have to refrigerate this one unless you want to. TIIOl SAM) ISLAND DRESSING 1 cup home-made mayonnaise 2 T. catsup 2 T. pickle relish or chili sauce 1 hard-cooked egg, chopped salt and pepper to taste dash of paprika if desired Add all ingredients but egg and blend well. Add egg and mix lightly. Refrigerate. HOME-MADE MUSTARD 1 tup flour , 'cup sugar, scant :H T. dry mustard ' cup cider vinegar 's Isp. salt 1 T. cold water 2-:t drops yellow food coloring Mix all ingredients together and blend well. Refrigerate for at least two days before using. I use the white vinegar if I want a milder mustard. Most of you know that cider vinegar is strong. Also vary the amount of the other ingredients if you like to experiment. ex-periment. Gabby's recipe is similar to this only I found that his mustard conlinually separeted when it wasn't l)eing used. I don't have this problem with (his recipe. MUSTARD !l T. flour it T. sugar 2 tsp. salt 2 scant tsp. tumeric 5 T. dry mustard i cup water i cup vinegar 2 T. butter Sift all dry ingredients together.' Bring water and vinegar to boil. Add dry ingredients and stir and cook until smooth. Add butter. Pour into bottles, seal and cold-pack 10-15 min. The above recipe was shared by a dear friend. She's an excellent cook so I think you will enjoy her recipe. This one is especially good to make in the off-canning off-canning season and have in our food storage. Jell was an honor graduate of Spanish Fork High School He is also attending USU. The couple will continue their studies at I'Sl' -and make their home in Logan. iifl lillllfl Home Culture Club met at the home of Mrs. Wilford Kapp March 19. Mrs. Leonard Harward was co-hostess. Carma Dejong Anderson An-derson gave the program on 'Know Yourself and Your Home." Mrs. Anderson showed slides on basic principles of putting art in your home. Mrs. Max Alleman, president, welcomed all club members and guests. The Club Collect was read by Jane Strong. Mrs. Elden Peery led the Pledge of Allegiance. Mrs. Angus Hales, chairman of the nominating committee, named the new officers for the coming year: Mrs. Walter Fowler, president; Mrs. Bert Brown, vice president; Mrs. Elden Peery, secretary and treasurer; Lunch was served to 18 members and two guests, Mrs. Judd Harward of Spanish Fork and Mrs. Leonard James. Next club meeting will be April Hi. CribCorner Cultural Arts Club notes birthday Cultural Arts Club was hed ; March .17 -at , the Social Center in Spanish Fdrk. hostesses were Margaret Holdaway, Pat Whiting, Theora Boulten. Along with dinner there was a beautiful birthday cake, candles and all. Cora Ellis, a charter member, had the honors of blowing all the candles out. 1- ' .,; r. Pat Whiting gave a very informative history of the Club, since its beginning, of the good times, services, familv and friends. The Club was federated by the Home Culture Club 42 years ago. David Gardner, who works with R.S.V.P. Retired Senior Volunteer Program, his wife and six children presented the program. There was singing, instruments, and special readings David has given the one on "Cinderella" over 3,000 times. Had everybody laughing. Boyers review Alaskan mission Ernest and Evelyn Boyer gave a slide presentation and talked to members of the Ladies' Literary Club here last week. . : Following lunch, the Boyers showed slides and related experiences highlighting their msssion in White Horse, Alaska. Of added interest was the singing of two songs. "Trees" and "My Own America" by Mrs. Boyer, accompanied by Julia Sumsion on the piano. By request, Evelyn also read the poem, "The Cremation of Sam McGee," adding a bit of Yukon flavor to the presentation. Julia Sumsion was in charge of the program. Dora Pepper exhibits hats The Mothers' Study Club met at Sage Inn recently where they enjoyed a program by Dora Pepper who displayed 50 of her miniature hats on busts. Louise Tasker, program chairman, introduced Mrs. Pepper. President Teddy Seal welcomed members and guests. Margaret Ot-terson Ot-terson sang "The Easter Parade" accompanied by her husband on the piano. Mrs. Pepper was born in Colton, Utah. As a young girl her interests were in creating miniature hats. After graduating from high school, she was employed in the millinery department of the Paris Company in Salt Lake City and also worked for ,Walker Brothers, ...... ' She studied the art of miniature hats, and the workmanship on her hats is truly a work of art. She also fashioned and made the heads the hats were displayed on. I .
