Daughters of Utah Pioneers sign check for new statue Jen Allen STAFF WRITER The Daughters of the Utah Pioneers took a big step towards the completion of their Pioneer Cemetery Restoration Project this past week. Janene Baadsgaard gave a brief explanation as to why the DUP decided to start this project a little over three years ago. "These were some of the first members of town... we want to honor them," Baadsgaard explained. Together, with residents and the help of old records, the DUP is creating a list of names of those who are currently buried there. Thus far, they feel confident with the list of names they have. This particular project has been a large scale effort that has included the aid of the city planner, the area developer, the city council and the Fuentes all along side the DUP. "It's been a work of love. That's for sure," said Pat Mitchell. Natella Montague, President of the WEDNESDAY, FEBRUARY 27, 2008 • A3 Utah County Fair moves to Spanish Fork The Utah County Fair will open at the Spanish Fork Fair.Grounds Aug. 13 and close Aug. 16. , Spanish Fork Chapter of the DUP, along with Pat Mitchell of the Cemetery Restoration Committee, signed the check over to artists Alex and Erasmo Fuentes for the commission of their bronze sculpture that is to be placed in the center of the old Pioneer Cemetery. The check, only half of the sculpture's actual price tag, allowed for the work to begin on the life size bronze image of a pioneer family. Progress on the statue can be followed by accessing the Fuentes' website at Fuentessculpture.com under the In Progress section of the site. The DUP still needs help in raising funds for the completion of the project. Thus far to raise money they have had many charitable donations and even held a raffle. Further plans to raise money include selling cook books for $10 each. The goal is to have the project completely finished in time for Fiesta Days. Donations to aid the DUP in their efforts can still be made, are tax deductible and can be mailed to Daughters of the Utah Pioneers, Utah South Community Cemetery PO BOX 37 Spanish Fork, UT 84660. , .••^../ • ^ . •• The Utah County Fair Committee is pleased with the amenities offered at the Spanish Fork Fairgrounds, and plans to produce a fair to remember. There is plenty of parking and things to do and see every day at the County Fair. , , . „ , - .. The Utah County Fair officially opens 4 p.m. on August 13, and the excitement will continue until the final fireworks show August 16. The entire family will find entertainment and fun. I I love coconut and this is a favorite cocpnut cookie. It is so nice to have the | family come home from work or school and have the nice aroma of baking, I especially on a cold day. I 1 c. soft shortening (half butter) 2 c. brown sugar I 2 eggs 1/4 c. water ! 1 tsp. vanilla 4 c. flour I 1 1/2 tsp. baking powder 1 1/2 tsp. soda dash of salt 1 1/2 c. coconut Mix shortening, sugar and eggs. Stir in water and vanilla. Add dry ingredients. Chill dough. Roll into longs about size of your pointer finger. Flatten quite thin, they do grow while baking. Bake in 400 degree oven 'til light brown, about 8-10 minutes. Frost with a burnt butter frosting: Melt and brown about 3/4 of a cube of margarine.
