Pour back into sauce pan. Cook over very low. heat, stirring almost constantly from the bottom with a rubber spatula, until mixture begins to thicken. Remove from heat Let cool. Stir in rum extract Beat egg whites until stiff but not dry. Beat about a fourth of the egg whites into first mixture. Gently fold in remaining whites. Pour into ungreased souffle dish capacity, 6" diameter x 2Vi" deep). Bake in preheated moderately hot oven (375 J) for about 30 minutes, or until puffed and brown.
