A simple marinade of hot sauce and crushed garlic is all you need to infuse flavor into the lowly chicken breast. The hardest part about this recipe is skewering the meat because it can be slippery. Be careful not to poke yourself with the skewers: it’s mighty painful. The original buffalo wings were deep fried then splashed with the secret sauce and then served with carrots, celery, and bleu cheese dressing. To lighten the dressing up, make your own with yogurt, sour cream, and bleu cheese. Bleu cheese is generally an acquired taste, so if you haven’t acquired it, feel free to substitute a packet of dry ranch dressing mix for the cheese. One of our other party food staples is fresh fruit with raspberry yogurt dip. For this pre- sentation, I’ve chosen only low glycemic index (GI) fruits. The yogurt dip is amazingly simple and so full of flavor your guests will never know it is lowfat. The glycemic index is a rating given to foods based on how fast that food increases the glucose level in the blood. All foods are compared against table sugar, which has a GI of 100. Raspberry Yogurt Fruit Dip 1 cup nonfat yogurt 1/2 cup frozen raspberries 1-3 packets of sweetener sliced apples and kiwi whole red and green grapes peeled orange sections Microwave raspberries until defrosted. If they get warm, cool them in the refrigerator. Crush the berries with a fork or the back of a spoon. Blend in yogurt and sweetener to taste. Refrigerate until ready to use.
