A Treutist on the Culture of the Keel Prepared lor the IJeneflt of Utah Farmers- jAn Inilustv that ShouldSuc ceed. NQten. CONCLUDED.) The plowing out, i. e. getting the jheets out of the ground at harvest . jng time is done with a particular Jcind of plow made purposely for Jthis work. .It is somewhat si mi a r to a. sub-soil blow in appearance, and has. a point or blade which "runs uuder the row of beets, looser )ng and slightly raising them, so ihat they can be taken by the lops atld easily removed from the ground, When the beets are pulled jthey are thorwn in large piles or .jows, and with a heavy knife the . (tops are cut scjuarcly off with one blow, at the base of the last or bottom leaf. If the tops are twist-jed twist-jed off, or a portion of the crown is left on the beets, new leaves will .sprout out at the first approach of .warm weather in the spring, and jthis will turn the saccharine matter into glucise which spoils the beet for sugar. The constituent principles of sugar are entirtly furnished by the atmosphere; and the sugar in a beet is formed from the air and sun light through the leases. The salinq matters are furnished by the soil and by fertilizers. ' It can readily be seen therefore lhat beets which are plan'ed closely together are less exhausting to the ,8:il, and produce more sugar, than those that are scattered or grown farther apart. Close culture has been demonstrated, through years of experiments, to be the most profitable at the same time to the grower and the manufacturer. AN AGREF.MEMT.
