Wash and cut. into small pieces enough young rhubarb to fill a quart measure. Put Into an enameled pan with 1 pounds of sugar, the grated rind 'and strained juice of one lemon, 12 almonds blanched and chopped finely. Boll quickly till they look like a rich marmalade, then add half an ounce of gelatine dissolved Iq two Lahleapoonfuls of boiling water. Pour Into a mold wetted with cold water. Set aside till firm.
