Show 6-- THE RICHFIELD REAPER Wednesday Mav 18 1994 Home Economist Says Potatoes Are Not Boring By Diane Reese L’SU Extension Pirates of the Mississippi lead singer Bill McCorvey captivated the Blackhawk Arena audience with the group's signature song ’Teed Jake" The Pirates Are A Hit At Blackhawk Arena By Bill McClure Reaper Staff Writer SALINA — The Pirates of the Mississippi broke new ground here Wednesday performing the first concert in the Blackhawk Arena before an enthusiastic crowd It was an experiment and it worked "The acoustics here are great really great" said head sound man Greg H Iton of Performance Audio Salt Lake City "This is the best indixr space we've worked in" Considering the fact that using the Blackhawk Arena as a concert venue was never considered during the the design ol the facility acoustical qualities of the building were a pleasant surprise The Pirates a high energy versatile group were immediately in tune with the audience During their second song Hank Williams' "Honky Tonk Blues" lead vocalist Bill McCorvey invited members of the audience to get up and dance if they wished Almost instantly couples and groups were dancing on both sides of the reserved scat section located on the packed dirt arena prompting a member of the Sev ier County Sheriffs Jeep Posse to remark: "I've been to several concerts in other parts of the state They'd never allow anything like this" The Pirate lead guitarist Rich Alves with his long blond hair flashing in the spotlights brought members of the audience out of their seats on sev eral ixcasions w ith hot licks and quips He frequently loped across the stage to pluck breaks with pedal steel player Pat Stevens Dean Tow son on bass and drummer Jimmy Lowe contributed the hard driv ing rhy thm which captured the audience The Pirates interspersed cuts from their new album "A Street Man Named Desire" throughout the show all of which were Home Economist Although potatoes are the most consumed vegetable in the United States they have a reputation for being dull Part of this is because people don't know how to shop for and handle potatoes properly The brow n skinned russet potato is the best choice for baking mashing and making French fries Red potatoes are better for boiling slicing for salads and for use in scalloped potatoes dishes When you are shopping for fresh potatoes avoid those that have a green color immediately beneath the skin This greening is associated w ith a bitter taste and the formation of solanin a potentially toxic substance that forms when potatoes are stored in brightly lighted areas The green portion can be peeled or cut off so the rest of the ptato can be safely used To keep your potatoes from greening at home be sure to store them in a cool dark place However you need to be careful that it is not too cool Don’t store them in the refrigerator or anywhere that will he cooler than 40 degrees Below this temperature the potato starch turns to sugar eventually making the potato too sweet or turn dark when they are cooked Other tips for properly handling potatoes: If potatoes are starch may leak out of broken starch grains and cause the potatoes to come out gummy Red potatoes are not good for French fries because if they sit for a while helorc sen ing the high moisture content of these potatoes will make the fries limp and soggy In a long cooking stew potato quality is improved if the potatoes are cooked separately until tender and then added to the stew near the end Potato cubes in stews and soups do not freeze well — they become spongy when thawed However containers or mashed potatoes stuffed baked potatoes and partially fried potatoes in French fries or hash browns hold up well They should he CELLULAR® ANNOUNCING SERVICE SOON RICHFIELD & SURROUNDING AREAS "We Don't Just Talk About We Do It It!
