The answer is Yes if you break with traditional techniques. All sugar substitutes lose their sweetness with prolonged baking, including the new aspartame sweetener that tastes like sugar. Thats favorites pies are promiwhy in this featured nently no-ba- ke column. The trick with oven-bake- d fruit pies is to sweeten the fruit filling after the pie is baked. That would be a trick, youre probably thinking. How do you get under the top crust - to add the sweetener? Ahha! There is no top crust in these Slim Gourmet recipes, thereby saving half the calories of pie pastry. (Did you know that pastry adds even more calories to pie than sugar?) TOPLESS SPICED , 6 2 1 er Use homemade or thawed pie pastry, rolled as thinly as possible. Or use a thawed, e small pie shell, transferred to a larger pan and stretched to fit. To stretch pastry: Gently fold the pastry in fourths, then transfer it to a larger glass pie pan. Unfold the pastry carefully, then stretch to fit with your fingertips, pressing the pastry up the sides of the pan. In a mixing bowl, combine the apples with the lemon juice, cornstarch, salt if using and allspice; mix well. (Dont add sweetener or other spices.) Spoon the unsweetened apple mixture into the pie shell. Cover the pie shell with a circle of aluminum foil cut to fit, or invert an empty pie pan over the apples to protect them from oven heat. Bake the pie in a preheated 8-- or 425-degr- ee or pie cups thinly sliced pared baking apples tablespoons lemon juice and one-ha- lf tablespoons cornstarch optional: pinch of salt utes until apples are tender and crust is brown.
