Youve given neighbors, friends, relatives and casual acquaintances bushels of fruit and still your refrigerator is bulging with apricots. Its amazing how much fruit one tree can produce and how insect this particularly and prolific food can be. wind-resista- nt There are several obvious answers to the dilemma of too many apricots They juice easily and when mixed with orange juice or lemonade, the drink is tasty at breakfast or anytime. Apricot3 are one of the fruits that most successfully converts into a dried fruit or leather. To accomplish this, select firm but ripe fruit. Drying can be done outside in the hot sun, in the oven, or in a home- - Livestock to be exhibited Davis County will hold its 60th county fair this year. FFA and youth of the county will exhibit their livestock at the county fair from July 29 to Aug. 1. The public needs to come to the fair to support their youth and also to see the other exhibit. The FFA and youth that exhibit market animals will be selling them at an auction held Friday evening which is the 31st of July. The aution will begin at 6 p.m. Bring your money and help support these youth by buying their market 4-- H 4-- H animals. If drying is done outside, secure a covering of net, not cheesecloth which sticks, to protect the food from insects. Drying in the oven is a simple method. Keep the heat no higher than 145 degrees. Turn the trays for more even drying and leave the oven door partially open to allow the moisture to escape. It takes from 12 to 36 hours to complete the drying process depending on the thickness and size of the fruit and the method used. Home-drie- d fruit will be darker in color than that found in a grocery store. After the fruit is dried, some pieces will be brittle while others will have pockets of moisture. Hang the dried fruit in a cloth sack or a clean brown paper sack and let the air circulate through it for a day or two. Store dried fruit in glass jars or heavy plastic bags placed inside brown paper bags to keep it from discoloring. Fruit leather is a version of dried fruit. Cover the bottom of a cookie sheet with plastic wrap. Put the fruit through a blender and pour the puree evenly over the cookie sheet. It takes about 2 cups per cookie sheet. Some people add a little crushed pineapple to their apricot leather. This improves the flavor and color. It is a good idea to mask down the edges of the plastic wrap before pouring the puree onto the sheet. Store the finished product in a glass jar. Apricot puree has many uses besides leather or the base for a drink. It can be added to a milk shake or used to moisten fruit cake or cookies. F-- al EMERGENCY of apricots and force through a sieve. Cream Vz cup butter or margarine, add Vi cup powdered sugar. Add 1 egg white and Vi teaspoon vanilla, beat well. Blend in apricots and half of dry ingredients. Drop onto greased baking sheets. Cross flat with fork. Bake at 375 for 4 to 7 minutes. Cookies should not brown. APRICOT NUT BREAD Wash Vi cups apricots. Cover with hot water and let stand V2 hour. Drain. Chop. Cream V2 cup shortening, Vi cup sugar and 1 teaspoon salt. Add 1 egg, beating well. Sift 2 cups flour and 3 teaspoons baking powder. Add alternately with Vi cup milk.
