Hiller (Audrey Jackson) have returned home from a delightful two weeks' honeymoon trip. BY SISTER MARY NEA Serviec "Writer THE delicacy and sweetness of flavor of asparagus disappear soon after it is gathered, so, to be at its best, it should be cut and used Immediately if possible. When buying, look for straight. crijp stalks with the little pointed scales pressed tightly against the stalk at the tip where the growth is the newest. Thick stalks are more desirable than thin ones because the lengthy thin stalks usually designate desig-nate long growth and consequent toughness. Be sure, too, that the cut surface is not dry and that the stalk does not feel tough and woody nor look shriveled. Handle Like Flowers After buying fresh asparagus treat it as carefully as you would cut flowers. If tied in a bunch, cut the cord. Keep it fresh by standing in a little water to retain re-tain its natural moisture and put it in a cool place. When ready to cook, cut off the tough ends. Wash them well and put them to eock it cold water. This extracts the mineral salts and the water is used to cook the rest of fhe asparagus, the tough ends being skimmed out and discarded. It's also an excellent plan to remove re-move the scales on the stalks. Very often sand and grit are found lodged under these scales so close to the stalk that no amount of brushing or washing can remove them. The heads should be handled han-dled very tenderly because they are easily bruised. Do not attempt at-tempt to scrape the scales from the heads. You can cut the stalks in inch lengths and cook them in boiling O. S. Dancing Party Planned Active and alumnae members of the O. This is an old-fashioned way of preparing the vegetable and was popular during the day of "side" dishes. If you add plenty of milk and butter to the liquid in which the asparagus was cooked cook-ed you have actually a thin cream soup that makes a nourishing luncheon dish for children. , Try This Modern Method The modern way of cookins Is to tie the asparagus in small bunches suitable for individual service and cook them standing upright in boiling water. Enough water to cover the thick part of the stalks should be used. In this way the heads cook in the steam for the most part. When . -tiro stalks are almost done, lay bnnch-es bnnch-es flat in water to finish cooking. This insures a perfectly cooked, unbroken tip. When ready- - to serve, remove each bundle from kettle, cut and remove strings-and srve with melted butter or drawn butter sauce made with the liquid in which asparagus was cooked.
