Crisp parsley and ; lemon wedges add an extra touch 01 color when the dish is served. ,., Salmon The -following recipe is for sal- mon but any variety of fish can be use?- small boned fresh water snd Vleep sea fish as well as deep sea nsa cut in steaks ana nirets. Two slices salmon, 3 hard cook ed eggs, 1 cup white sauce, 1 lemon. lem-on. Brush both sides of salmon with olive oil and brown on both sides in a hot frying pan or under a gas broiler. Remove to a hot oiled plank, placing oner steak on plank. Sprinkle with lemon juice and cover cov-er with a layer of eggs cut in slices and moistened with white sauce. Cover with second slice of salmon and sprinkle with lemon juice. Surround with vegetables and put fa a hot oven for five or ten minutes min-utes to make .very. hot. BREAKFAST: Fresh apricots, apri-cots, cereal, cream, French toast, maple syrup, milk, coffee. cof-fee. LUNCHEON: Jellied cottage cot-tage cheese salad, hot buttered butter-ed rolls, peach cobbler with cream, grape juice. DINNER: Planked white fish with border of spinach timbales, buttered babv beets and mashed potato, cabbage and celery salad in onion and pepper cups, cherry ice. milk, tea. Two pounds spinach. 1 teasnoon salt. 1-2 teaspoon sugar, 1-8 teaspoon tea-spoon pepper, 2 tablespoons lem on juice, yolks of 3 eggs. Wash spinach through many wa ters and remove coarse stalks and stems. Cook in watrr which clings to leaves, letting water cook away as much as possible without burning. burn-ing. Drain and chon very finer. Season with lemon juice, sugar, salt and pepper and add egg yolks well beaten. Turn ihio buttered individual molds. Place on sev eral thicknesses of paper in a nan of hot water and bake in moderate moder-ate oven for twenty minutes. Un-mold Un-mold and serve. Border plank with piping of mashed potatoes or alternate the timbales with mounds of potato marbles. Serve Hollandaise in a senarater dish for the timbales. Buttered baby beats may be included with the vegetables on the Blank if a salad is not wanted. Use care not to over-crowd a plank. Miss Jeppson To Aid Canadian Play - Miss Wilma Jeppson, assistant professor of physical education for women at Brigham Young university, univer-sity, will leave Thursday for Card-ston, Card-ston, Alberta, Canada, where she will direct a play and recreational institute during the latter part of June for several Latter-day Saint settlements in that region. She will be accompanied by Edith Young of American Fork, who was second vice-president of the student body and head of the public service bureau at B. Y. U. last year. Miss Young will assist Professor Jeppson in organizing the institute. On her return from Canada Professor Pro-fessor Jeppson will go to New York and then to Bennington college, col-lege, Vermont, where she will spend the latter part of the summer sum-mer attending the school of dancing danc-ing at the college.
