Take your freshly opened roses, any color, and grasp as many petals as you can between your fingers and thumb. Then, with a scissors, snip the petals off all at (Mice above the white bases. (The bases are bitter.) Blend 1 cup of these petals in a blender with the juice of one lemon and cup of water. Blend until smooth, gradually adding 2 z cups of sugar. Keep blending until all of the sugar is dissolved and then put this mixture aside. Now stir 1 package of pectin (Pen-Je- l or Sure-Jel- ) into 3a cup of water.. Bring to a boil and boil hard for 1 minute, stirring constantly. Pour the pectin into the rose-sugmixture, while runthe blender ning slowly until all of the ingredients are thoroughly mixed. Pour into sterilized jars, seal with hot paraffin, cool, and refrigerate. If you want to keep the jam for a long time, it can also be frozen. Another use for roses in the past was to dry the blossoms and make sachets of them to put among clothes for freshness. Heres how: Gather 2 cups of fragrant newly opened rose petals as early in the morning as possible. Spread the petals on a large tray lined with paper towels in a protected area where the wind wont blow them around. If you have mint leaves, dry a few of them too, to add fragrance and color. Let the petals dry from four days to a week. Turn them often, and when they crackle when picked up, theyre dry enough for use. After the petals are dry, put well. Next, take a 3 x piece of net fold and it so it is 3 x 3 nylon indies, and stitch down two sides to make a bag. Fill the bag with the petal mixture, gather the top of the bag together, and tie it with thread. A bow tied of ribbon over the thread is a finishing touch. One other thing made with roses is Rose Water. This is used in India to flavor soft drinks, ice cream, sherberts, cakes, and other delicacies. In Turkey, it is used on the table as wed use catsup or savory sauce. The Arabs used it as a glaze for roasting fowls. The glaze is made by mixing 3 tablespoons honey, 2 tablespoons melted butter, and 1 tablespoon Rose Water. Then it is painted on the fowl with a pastry brush and used for basting. Rose Water can also be put in white cake frosting to give a delightful fragrance and taste. To make Rose Water, you gather the rose petals, just barely cover them with water, bring them slowly to a boil, and let them simmer a few minutes. A final use for roses is Candied Rose Petals. Just prepare the petals as you would for jam by snipping off the white bases. Then mix the white of 1 egg with 1 tablespoon water, dip each petal in the liquid, and place convex side up on a paper towel to drain. When most of the liquid has drained off, but the petals are still damp, sprinkle with granulated sugar on both sides and place on waxed paper to dry for about 12 hours. When placed in a covered container in the refrigerator, these Candied Rose Petals will kepp for about a month. They make an elegant treat.
