April 3fl 974 THE PARK CITY Page 1 3 COALITION A Delight to Behold-e- n With Spring and Summer close at hand, it seems only appropriate that we look to someone whose business is oriented towards the warm weather. Randy Thomson owns and operates the Miners Delight ice cream parlor on Main Street. He originally came to Park City from Chicago with the Skunk Hollow Ski Club last March. He liked it so much that he decided not to return to Chicago. Randy had been a printer for Lakeside Press for ten years before coming to Park City. Lakeside was primarily responsible for the printing of Life magazine and when Life was discontinued, Randy was involved in one of those s. He had heavy corporate traveled around and skied at many of the Rocky Mountain area resorts and found Park City to be more to his liking. So he stayed! He lived for a while down in Salt Lake City and then moved to an apartment in the Imperial. Randy had no particular ideas or aspirations about what he was going to do in town. However, during the summer he would often see people walking around with boxes of fudge, and he thought to himself, if they'll buy candy, why not ice cream? Thus, the idea for lay-off- the Miners Delight was spawned. He had a small problem to cope with right off the mark, and that was where to put his shop. Fortunately, a friend of his from Lakeside, Jim Soaper, was remodeling his building, the old ITALIAN Cash Market, so Randy helped out and got a store front for his efforts. He literally built his business from the ground up, as me building was only a shell when they first started working on it. Stagg and Shoulders put in me concrete footings and the floor, and Randy and some others did what remained. When he first opened he had a partner, Jaime, from the Pick n Shovel restaurant. They had ah City agreement that when However, business has been steadily building up as everyone gets to know him, and he sees the need for a larger freezer in the near future. In fact, Randy was in town last summer for the Arts Festival, and hes already made plans to have an ample supply of ice cream on hand. Reflecting on the town, Randy sees the potential in Park City for it to be not only a great resort area, but also a great town just on its own. There is a definite need, he believes, for a happy medium to be found so that each can benefit from the other. Randy had never owned his own business, and it was only sound reasoning that he would enlist the aid of someone who had had that kind of experience before. So, now Randy is the sole owner.
