Poulson, home demonstration agent. Water Wat-er boils at a temperature below 212 F. at these higher altitudes so you have to add time to make up for less heat. Orem has an al-' titude of 4,600 feet above sea' level. Apricots packed cold into the bottles should be processed 34 minutes after they start boiling in the hot water bath. All berries ber-ries are processed 27 minutes-If minutes-If the berries or apricots are precooked, pre-cooked, packed hot and processed process-ed immediately, the water bath may be shortened 10 minutes. Non-acid vegetables and meats should be canned in the pressure cooker. Pressure cookers should be tested each year. In using the pressure cooker, add extra pressure pres-sure according to the gauge test and disregard the altitude correction. corr-ection. Whatever influence altitude alti-tude has will be taken care of in the gauge test. In summary: When canning fruits and tomatoes, add sufficient suffi-cient time to the hot-water bath to take care of the altitude.
