Spinach Au Gratin, 2 pounds spinach. 1 cup whito sauce. I cup grated cheese. z cup bread crumbs. 2 tablespoons butter. Salt and pepper. Wash and cook spinach. Chop fine. In a buttered baking dish put a layer of spinach, sprinklo with salt and pep , per and add a layer of white sauce. sprinkle sauce with cheese. Continue until all is used, having the last layer lay-er of white sauce and c.ieese. Cover with bread crumbs, mixed with melted melt-ed butter and put in a hot oven to' melt the cheese and brown the crumbs. 1 Strawberry Bavarian Cream. ! 1 quart berries. ! 1 tablespoon ge!atin U cup cold water. 4 cup sugar (granulated.) 1 cup whipping cream. 3 tablespoons powdered sugar. Vb teaspoon salt-Dissolve salt-Dissolve gelatin in cold water. Wash and hull berries. Put berries through1 a coarso sieve. Heat juice to boiling! point and stfr into gelatin. Add pulp and granulated sugar and set on ice to chill. Stir frequently to be sure tho sugar is dissolved. Whip cream, beat in powdered sugar and salt. When tho jelly begins to thicken add whipped cream. The cream must be ndded before be-fore the Jelly "sets" or the dessert! will not he as smooth ag It should. Let stand on ice two or three hours to bo- i come thoroughly chilled Some people say cido'r making will be prohibited. Let us look forward to a shortage of vinegar.
