Eislbdi oven cco!dng Dutch ovens are made of cast iron. Because they are so heavy, they heat evenly with little heat. The heavy lid, when it is et on properly, acts as a pressure cooker. In pioneer times, the Dutch an important posses- left-right-l- eft oven was sion for the people as they came across the plains. These versatile cooking implements could be used for many different kinds of food. Dutch ovens were probably NOT discarded when loads had to be lightened! left-han- left-han- Dutch ovens are useful in modem times for camping, or for any outdoor cooking, such as family reunions, church suppers, etc. Everything tastes better when its been cooked outdoors in a Dutch oven!! They are also useful to have as part of your emergency gear. They are very handy to have on hand during power outages, for instanc- -' es. - SEASONING ANEW DUTCH OVEN. All cast iron cookware must be seasoned before initial use. During manufacture the cookware receives a protective coating which must be removed. Place the Dutch oven in your home oven or over heat until it is very warm. Then wipe with paper towels until the towels come out clean. Next, pour a little bit of vegetable oil into the kettle, and with paper towels, spread the oil completely over the inside surface. Dont leave too much oil in the kettle, just a thin film otherwise it will become rancid. Dont forget to treat the lid, too. Coating the outside of both kettle and lid is a good idea. Use the paper towel you used for the inside; a VERY thin coating of oil will do fine for the outside. This will help resist rust. Now youre ready to cook! YOUR Forest Service using campground concessionaire -- OVEN. Ifyou havent used your Dutch oven in quite a while, or if the oily coating has gone rancid (you can tell by the smell!), then start all over again...' heat it, wipe it out, and l, wiping out the excess oil with paper towels, leaving only a light coating. If your Dutch oven gets rusty, it can be saved! Wipe all the rust you can, then warm it up, and rub it with oil, giving extra attention to the places where it was rusty. This may be a bit time - consuming, but if it will save your oven, its worth it. Sometimes, if your oven was put away dirty, after a time the insides may become pitted.
