Here Is a recipe for pumpkin pie given by the head pastry cook of one of the most famous hotels In the I'nited States: fi'ake one quart of pumpkin strained through a sieve, add hahifjnd of sugar, two ounces of melted buttur, nine eggs, half an ounce of grcund ginger, of an ouoc of ground cinnaof an ounce of ground mon, cloves, half a teaspnonful of grated nutmeg, a pinch of salt and a mix and beat of molars; well together, add a pint aud a half of milk. This will mstke filing for two large pies; b ke in a moderate oven. To stew pumpkin for pics wash and dry the pumpkin, then cut in slices around the pumpkin. Remove the rind and cut in small piecrs. Place the pieces in a kettle with one cupful of water and lit it s!ew slowly, taking care that the pumpkin does not burn. When the pumpkin is thoroughly cooked the water should have pretty thoroughly boiled away. Do not pour out any of the liquid, as this contains the richness and flivor of the pumpkin. Strain one quait of this stewed pumpkin into a pm and add a scant tablespoon ful of ginger, one of cinnamon, a piece of butter the size of an eirg, five eggs beaten, f with one and cupfuls of sugar. When the ingredients are well beaten together add two quarts of hot milk and a pinch of salt. Piace the pan containing this mixture over a kettle of hot water to keep warm while the plates are b'ing lined with paste.
