Fantastic Apple Pie Filling Fresh Apple Cake cups dices, peeled apples 2 cups sugar Vi cup oil 2 eggs, beaten 1 cup chopped nuts 2 tsp. vanilla 2 cups sifted flour 1 tsp. salt 2 tsp. soda 2 tsp. cinnamon 1 cup shredded coconut V cup raisins Mix apples and sugar well: add oil, eggs, nuts and vanilla. Mix together flour, salt, soda and cinnamon. Add to apple 4 42 cups sugar cup cornstarch 1 2 3 2 tsp. cinnamon tsp. nutmeg tbsp. lemon juice or 3 drops yellow coloring 5': to 6 pounds tart apples, peeled, cored and sliced In a large saucepan blend sugar, cornstarch, cinnamon and nutmeg, and 1 tsp. salt. Stir in 10 cups water; cook and stir till thickened and bubbly. Add lemon juice and food coloring. Pack apples into hot headspace. jars, leaving Fill with hot syrup, leaving headspace. (Use spatula to help distribute syrup.) Adjust lids. Process in boiling water bath; pints, 15 minutes; quarts, 20 minutes. Makes 6 quarts. Before serving: Prepare pas8 or 9 inch pie. try for a Line pie plate with pastry; add 1 quart apple pie filling. Adjust top crust, cutting slits for escape of steam; seal.
