PROCESS REPEATED The next morning boil for 15 minutes again. Repeat the heating and cooling from 4 to 6 days, according to how rapidly the water is drawn out and the syrup is absorbed. The fruit plumps slowly and the gradual increase in the density of the syrup caused by many cookings insures tender fruit filled with syrup. After the fruit is transparent and bright, lift it from the syrup and dry in the sun or in a cool oven.
