Some we keep, but most we dont, said Mountain Fuel Supply home economist, Jolie Howard. But, those who feel that fitness and health are really worth the extra effort can incorporate some ideas to help them stick with their resolution. She demonstrated some cooking skills and recipes around the theme Fun With Fitness Foods to a large group of Davis County homemakers at a symposium sponsored by Utah State Extension Service last week. Maintaining physical health is the number one concern with Americans today," she said, referring to resolution. She described physical fitness as achieving an ideal weight, keeping up physical energy, and getting enough rest. Many fad diets and extreme exercise programs are no good physical fitness programs, she Fitness Punch dough down and divide into two parts, let rest 10 minutes. Divide each portion of dough into 2 portions, one slightly larger than the other. Flatten larger circle. Place piece into a it onto a greased baking sheet. Shape remaining piece into a 4 inch round and place it on top of the larger round. Press together. Make the second loaf the same. Brush both with oil. Steaming vegetables is a good, healthful way to cook them, according to Ms. Howard. She said that steaming maintains more of the vitamins and minerals and that vegetables should be cooked only until Vegetables have a wonderful texture, beautiful color, and much flavor, she said. Over cooking eliminates alot of that. And, although most of us salt our vegetables for added flavor, she said that by learning to cook with herbs, vegetables can be enhanced without added sodium, which can contribute to water retention and high blood presch 1 1 1 rilm 35-4- M'i tpL, m said. Foods from the four food groups and good cooking techniques such as steaming, stir frying, and broiling all can enhance fitness, according to Ms. Howard. Speaking about broiling, she said that many people tend to stay away from broiling because they consider it to be too messy. But a few hints can help to make cleanup after broiling easier and encourage its use. She suggested that the broiler rack be sprayed with a vegetable spray before foods are placed on it. After the cooking is completed, while the rack is still warm, it should be sprayed with dishwashing soap and wet paper toweling placed over it. That will soften the spills foods and make and burned-o- n cleanup easier, she said. Lining the pan that the rack sets in with foil will make that part of cleanup a breeze since all of the grease and drippings can be thrown out with the foil. Ms. Howard demonstrated one of her favorite broiled fish recipes. She said she feels fish is a really wonderful food because its low fat and salt content and its high, good quality ; protein content. We seem to get most of our protein from red meat, she said. But it has been proven that red meats can lead to high cholesterol levels which contribute to high blood pressure and heart disease and strokes. Fat is necessary in the diet, but we should try to get it from plant and not from animal -. sources. Fish A La Orange i r Lwr crisp-tender- ." sure. Vegetables should be the main part of a good meal," she maintained. When they become the main part of your snacks and meals you are on your way to a sound fitness program." Breads also play an important part in a fitness program, despite their reputation as high calorie culprits, Ms. Howard said. We should include breads in our daily eating routine even when dieting, she said. Bread adds needed fiber for digestion, carbohydrates for energy, vitamins and minerals for a healthy body and a small amount of protein.. Citrus Nut Bread was chosen by Ms. Howard.
